Since I moved to Brasil I discovered a new found love for cooking, baking and pretty much anything food related.
Today was a lazy Sunday baking kinda day and one of my favourite treats to bake is rock buns, simply because they're the easiest thing EVER. They aren't beautifully decorated, cut to size or shaped to perfection but they definitely taste delicious!
Rock buns (or rock cakes as they're sometimes known) are a traditional British evening sweet treat.
Fun fact - During World War II rock buns were promoted by the 'Ministry of Food' since they require fewer eggs and less sugar than ordinary cakes.
So, how do you make them?
The below recipe will allow you enjoy roughly 10-16 rock buns.
Ingredients;
225g - Self -raising flour
100g - Margarine
75g - Mixed dried fruit
50g - Sugar
1 - Egg
Milk to mix
Pinch of salt
Method;
Heat oven to 200ºC (400ºF/Gas Mark 6) - Grease two baking trays.
Mix the flour and salt, rub in the margarine.
Stir in the dried fruit, mixed peel and sugar.
Mix to a stiff dough with egg and milk.
Place in rough heaps on the baking tray.
Bake for 10-15 minutes.
